Ingredients
  

  • Olive oil: 1–2 tablespoons
  • Yellow onion: 1 medium, diced
  • Carrots: 2 medium, diced
  • Celery: 2 ribs, diced
  • Garlic: 4 cloves, minced
  • Zucchini: 1 medium, diced
  • Baby spinach or kale: 3–4 cups, chopped
  • Canned diced tomatoes: 1 can (14–15 oz)
  • Tomato paste: 1 tablespoon
  • Low-sodium chicken or vegetable broth: 6 cups
  • Cannellini beans: 1 can (15 oz), drained and rinsed
  • Chickpeas: 1 can (15 oz), drained and rinsed
  • Brown or green lentils: 3/4 cup, rinsed (uncooked)
  • Small whole-wheat pasta (ditalini or elbows): 3/4 cup
  • Lean ground turkey or chicken (optional): 8–12 oz, or use firm tofu for a vegetarian boost
  • Parmesan rind (optional but great): 1 piece
  • Dried oregano: 1 teaspoon
  • Dried basil: 1 teaspoon
  • Bay leaf: 1
  • Red pepper flakes (optional): A pinch
  • Salt and black pepper: To taste
  • Lemon: 1, for finishing
  • Fresh parsley or basil: A handful, chopped
  • Grated Parmesan (optional for serving): To taste

Method
 

  1. Brown the protein (if using): Heat olive oil in a large pot over medium heat. Add ground turkey or chicken with a pinch of salt and pepper. Cook, breaking it up, until lightly browned, 4–6 minutes. Transfer to a plate.
  2. Sweat the aromatics: In the same pot, add onion, carrots, and celery with a pinch of salt. Cook until softened, 6–8 minutes. Stir in garlic for 30 seconds until fragrant.
  3. Build the base: Add tomato paste, dried oregano, dried basil, and red pepper flakes. Cook 1 minute, stirring, to toast the spices.
  4. Add liquids and lentils: Pour in broth and the canned tomatoes. Add bay leaf, Parmesan rind (if using), and the rinsed lentils. Return the browned meat to the pot. Bring to a boil, then lower to a steady simmer for 20 minutes.
  5. Stir in veggies and beans: Add zucchini, cannellini beans, and chickpeas. Simmer 10 minutes more until lentils are tender.
  6. Cook the pasta: Stir in the pasta and cook until just al dente, 7–10 minutes depending on shape. If the soup thickens too much, add a splash of hot water or extra broth.
  7. Finish with greens: Add spinach or kale and cook 1–2 minutes until wilted. Squeeze in half a lemon. Taste and season with salt and pepper.
  8. Serve: Remove bay leaf and Parmesan rind. Ladle into bowls and top with chopped parsley or basil. Add grated Parmesan if you like.
