Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add onion, celery, and carrots.
Cook 5–6 minutes, stirring, until softened. Add garlic, thyme, and oregano. Cook 1 minute until fragrant.
Add broth and chicken: Pour in bone broth and add the bay leaf.
Bring to a gentle boil. Add chicken breasts, reduce to a simmer, cover, and cook 12–15 minutes, or until chicken is cooked through.
Shred the chicken: Transfer chicken to a cutting board. Shred with two forks into bite-size pieces.
Keep the broth simmering.
Cook the noodles: Add noodles to the simmering broth and cook according to package directions until al dente, usually 6–8 minutes.
Combine and boost: Return shredded chicken to the pot. Stir in white beans and any optional boosters like collagen (sprinkle and whisk to dissolve), quinoa, or peas. Simmer 2–3 minutes to warm through.
Add greens and finish: Stir in spinach or kale until wilted.
Add parsley and lemon juice. Taste and season with salt and pepper.
Serve: Ladle into bowls. For extra richness, you can drizzle a little olive oil or crack black pepper on top.
